LUNCH Meal Plan 11/12 + Meal Prep

Y’all. This last week. I struggled with cooking almost every night and for every lunch. I didn’t get done what I had planned to do, wanted to do. The kids still managed homemade lunches every day, but it wasn’t easy. That said, I’m going into this week determined to try to take it a little easy and to give myself a break. Besides, the boys get out early on Friday and won’t go back for over a week so I’ll get a week off to fully recover. Per Instagram request, here’s a look at the lunch meals I have planned for the week ahead AND accompanying meal prep that I’ll do to…

Lunch Meal Plan 11/05 + Meal Prep

I am late in posting last week’s recap but I didn’t want you to miss out on this week’s LUNCH meal plan and meal prep! This week is a little busy for us – I am basically gone all Monday (MOPS meeting, volunteering @ school, after-school activities), my kindergartener has his first field trip (so meal has to be 100% disposable) and lots of other fun things going on. I’ve been trying to prep as much as I can today (Sunday) to get us ready for the busy week ahead. Per Instagram request, here’s a look at the lunch meals I have planned for the week ahead AND accompanying meal prep that…

Our Lunch Meal Plan (Week of 10/29/18) + Lunch Prep

Per Instagram request, here’s a look at the lunch meals I have planned for the week ahead AND accompanying meal prep that I’ll do to help stay on track. You’ll also find links to recipes (or similar recipes available online) so you can follow along, if you’d like! Check back here at the end of the week (Friday) for an update on how the meals went. Oh, and speaking of Fridays! You’ll notice I only plan lunches for four days/week. My older two (8 and 6) take lunch to school Monday-Thursday but their school has a pizza/ice cream day each Friday. Because they do such a good job eating…

    Weekly School Lunch Recap! (10/22/18)

Here’s where I tell you how we did on our homemade lunches for the past week! As I mentioned in my last post, I plan four lunches/week for the boys and let them buy on Fridays. Before we dive into the photos, though, let’s review what the original plan looked like: Monday: Fruity Chicken Salad Sandwiches. Closest recipe online I could find is here. Tuesday: California Club Wraps (similar here, ours will have hard-boiled eggs and a homemade ranch dressing on them, no chicken) Wednesday: Chicken and Waffle Sliders (making homemade waffles and will make chicken nuggets based on this recipe) Thursday: Homemade Spaghetti-Os with mini turkey meatballs So, in no particular order, let’s review: Tuesday’s Lunch: California club wraps.…

Meal Plan October Week 3 (Behind the Scenes!)

Yes, I am still busy over here meal planning! I haven’t shared lately because by the time I get my meals laid out, groceries ordered and picked up and back home, I’m wiped. And let’s be honest, too. Infant twins are a lot to handle. I wouldn’t trade them for the world, but there are many times where… I just don’t have time. So, instead of typing out the list, I thought it would be fun to share it as I write it (and see it) all week long. At the end of most lines, there’s an abbreviation and number in parenthesis. Those are noted so I know which…

Weekly Meal Plan – August Week Four

Yay – the school year has started! Our oldest is back in school and now, our meal plans have been altered a bit to include easy, whole-foods lunches that we can pack and send with him… along with healthy after-school snacks that I can make in advance and have ready for the afternoons. You’ll now find that the “lunch” portion of our menus just outlines the main course. I’ll fill in the fruits, veggies, extras each day depending on what we have available. My goal for this year is no lunch repeats… we’ll see how this turns out! In the meantime, this week, we’re looking forward to the following: Monday…

Weekly Meal Plan – June Week 2

Oh, look at me getting all off schedule again. Can I mention here how we’ve been out of town? That one baby is now crawling and all bets are off? That school ended and adjusting to having all the kids in one house together is lots of fun? How we spent several days eating someone else’s delicious cooking and how it took us a bit to get back into the rhythm of being home? (Note to self: Plan better for being out of town so we are well-stocked when we return. Oh, oh! And best gift ever – a homemade meal to send home with your weekend guests to reheat once…

Weekly Meal Plan – May Week 4

There may be hope for me yet! Two weeks in a row with planned meals – it’s almost like I’m in a dream. Though, speaking of which, the girls have been going through a huge growth spurt, getting their first teeth AND figuring out how to crawl which has meant that I only wish this could be a dream. We’ve been running on very, very little sleep for about a month now and honestly, we’re a bit exhausted. Even E has been up multiple times a night which means, quite literally, no rest for the weary. Anyway. Food. Back to that. It always makes me feel good to have a plan…

    Weekly Meal Plan!

It’s been quite awhile since I was able to share our weekly meal plan here. Admittedly, we’ve been pretty busy – in the way that a family of six with twin babies moves, takes a 10-day drive halfway across the country, hosts a housewarming, a neighborhood party and still tries to find time to do normal things can be. Most of our weekly plans were adapted to whatever we had going on the week before or after. Following our neighborhood grill party, we only bought things to round out the meal plan and just used the leftovers that we had, for example. The return to being able to sit down…

Weekly Meal Plan – January Week 2

One of my favorite weekend rituals is waking up early to plan our meals for the week ahead. I know a lot of families struggle with eating healthful meals or find themselves at the end of a long day with nothing planned to feed the tired and hungry mouths looking at them in anticipation. While there are a lot of aspects of motherhood I can decidedly confirm are difficult for me, planning and executing weekly meal plans isn’t one of them. My hope is that sharing my meal plans (and recipe links, where appropriate) will inspire you to browse through Pinterest or your cookbook collection to find something to nourish your family…
