    Y’all. This last week. I struggled with cooking almost every night and for every lunch. I didn’t get done what I had planned to do, wanted to do. The kids still managed homemade lunches every day, but it wasn’t easy. That said, I’m going into this week determined to try to take it a little easy and to give myself a break. Besides, the boys get out early on Friday and won’t go back for over a week so I’ll get a week off to fully recover.     I am late in posting last week’s recap but I didn’t want you to miss out on this week’s LUNCH meal plan and meal prep! This week is a little busy for us – I am basically gone all Monday (MOPS meeting, volunteering @ school, after-school activities), my kindergartener has his first field trip (so meal has to be 100% disposable) and lots of other fun things going on.       Per Instagram request, here’s a look at the lunch meals I have planned for the week ahead AND accompanying meal prep that I’ll do to help stay on track.     Weekly School Lunch Recap! (10/22/18)

    Here’s where I tell you how we did on our homemade lunches for the past week! As I mentioned in my last post, I plan four lunches/week for the boys and let them buy on Fridays. Before we dive into the photos, though, let’s review what the original plan looked like: Monday: Fruity Chicken Salad Sandwiches. Closest recipe online I could find is here.     Our Lunch Meal Plan (Week of 10/22/18) + Lunch Prep

      I’ve had several requests on Instagram (@golightlymama) for our weekly meal plans so I thought I’d start trying to post these in case they help anyone prepare for their week ahead, too! Weekly meal planning is something I almost always do because it makes me feel organized and prepared and it helps me be sure that I have healthy foods planned every day. I’ll make a separate post (or two) about meal planning because to me, it’s that important.
