I’ve been sharing our weekly lunch meal plans (you can see the latest one here) but I thought it would be helpful if we also shared our weekly dinner menu, too. I’ll include a set of Meal Prep instructions so you can follow along if you’d like!
This week, I’ve been trying to take it easy with our lunch plan and for dinner, I wanted to try to make a few vegan dinners (for reasons I’ll explain later). Mostly, though, it’s because I like eating, too, and when I spend a lot of time focusing on everyone elses’ meals, I sometimes put myself last… and once in awhile, it’s nice to have a whole week of food I can eat. 🙂
Monday – Spaghetti with Beanballs (Similar recipe here, I’m making marinara from scratch), Salad
Tuesday – Manzana Chili Verde with Cornbread Muffins
Wednesdays – Middle Eastern Pita Pockets (Not the recipe I’m using, but a good looking one here!)
Thursday – Farro Minestrone
Friday – Sweet Potato Enchilada Stacks (Similar recipe here.)
For snacks, I’m going to make the following:
Buffalo Cauliflower Bites (Similar here)
Lebanese Bread Salad (Similar)
Vegan Tamales (recipe from Veganomicon… sorry!) Ooh! Found the recipe here.
I’ll admit to not being entirely prepared for everything this week, but this is what dinner prep is going to likely look like:
Monday – Cook marinara, cook beans for beanballs, assemble/bake beanballs
Tuesday – Cook beans for chili, bake cornbread muffins, Cook beans for Wednesday?
Wednesday – Day of rest? Does this really happen? Maybe I’ll make the tamales this day.
Thursday – Bake sweet potatoes
Ok. I admit. I haven’t looked at all the recipes I’m using enough to know what needs to happen. I do, however, look at the recipes the day before and will cook beans, etc., so that I’m in a good place by dinnertime the next night.
