Here’s where I tell you how we did on our homemade lunches for the past week! As I mentioned in my last post, I plan four lunches/week for the boys and let them buy on Fridays. Before we dive into the photos, though, let’s review what the original plan looked like:
Monday: Fruity Chicken Salad Sandwiches. Closest recipe online I could find is here.
Tuesday: California Club Wraps (similar here, ours will have hard-boiled eggs and a homemade ranch dressing on them, no chicken)
Wednesday: Chicken and Waffle Sliders (making homemade waffles and will make chicken nuggets based on this recipe)
So, in no particular order, let’s review:
California club wraps. The boys loved these – husband, too. I don’t know if it was just because it had bacon on it (rare treat in these parts!) or if it was the homemade ranch dressing that they liked best but everyone had clean plates! I included a green smoothie, an apple, and a side of raw veggies, raw almonds, pears and raspberries.
Chicken and waffles – another big hit! The chicken nuggets smelled amazing and I began to rethink my planning ahead strategy when the supply of nuggets steadily declined the day before…. Luckily, we still had enough to feed the boys + husband for lunch so it all worked out. (I just made two chicken breasts worth of nuggets.) I included a triple layer fruit salad (black grapes, raspberries and strawberries) with raw veggies and cheddar cheese slices. I tucked in a small container of maple syrup for the boys to dip their waffles in as well.
What was this again? Oh! Fruity chicken salad mini-bagel sandwiches. Well-received, no leftovers (even of the extras the recipe made). Sent with apple slices, blackberries, raw veggies (including rainbow carrots – how cute are they?) and a green smoothie.
So… Those are the lunches for this week. What happened to Thursday, you ask? Well. It’s been a long week here. Our school’s book fair opened this week and that meant I was working there for several hours/day and by Wednesday night, I knew something needed to give. I moved the homemade spaghetti-os to this week so you’ll see them on our next week’s meal plan again.
