Weekly Meal Plan – August Week Four

Yay – the school year has started! Our oldest is back in school and now, our meal plans have been altered a bit to include easy, whole-foods lunches that we can pack and send with him… along with healthy after-school snacks that I can make in advance and have ready for the afternoons. You’ll now find that the “lunch” portion of our menus just outlines the main course. I’ll fill in the fruits, veggies, extras each day depending on what we have available. My goal for this year is no lunch repeats… we’ll see how this turns out!

In the meantime, this week, we’re looking forward to the following:

Monday – Breakfast: Eggs-in-a-Nest Pesto Pizza

Lunch: Veggie Skewers

Snacks: Ham and Cheese Apple Wraps

Dinner: Garlic and Spinach Spaghetti Squash, Roasted Broccoli, Salad

Tuesday – Breakfast: Dutch Baby w/ Green Smoothies

Lunch: “The Frenchman” Grilled Sandwich

Snack: Rainbow Veggie Pinwheels

Dinner: Vegetarian Pad Thai, Coconut Lime Rice

Wednesday – Breakfast: Layered Lox Toast, Fruit Slices

Lunch: Spaghetti Cupcakes

Snack: Frozen Chocolate Banana Bites

Dinner: Roasted Sweet Potato + Black Bean Quesadilla, Skillet Corn

Thursday – Breakfast: Greens + Whole Grain Egg Scramble

Lunch: Cuban Pinwheels

Snack: Caprese Skewers

Dinner: Pot Roast w/ Green Beans, Rolls

Friday – Breakfast: Ham and Cheese Breakfast Polenta

Lunch: Greek Orzo Pasta Salad

Snack: Carrot Cake Muffins

Dinner: Ravioli with Sauteed Asparagus and Walnuts, Salad, French Bread

Saturday – Breakfast: Eggs Benedict
