Weekly Meal Plan – June Week 2


Oh, look at me getting all off schedule again. Can I mention here how we’ve been out of town? That one baby is now crawling and all bets are off? That school ended and adjusting to having all the kids in one house together is lots of fun? How we spent several days eating someone else’s delicious cooking and how it took us a bit to get back into the rhythm of being home? (Note to self: Plan better for being out of town so we are well-stocked when we return. Oh, oh! And best gift ever – a homemade meal to send home with your weekend guests to reheat once home. That was maybe the best part of the trip. <–Saving this for our next weekend guests.)

We stocked up on chicken during our last Costco trip and so I’m trying to work my way through it so it doesn’t languish in the freezer like other chickens before it. And, I’m doing pretty good – this time last year, I had barely cooked a chicken much less had desire to stockpile it. So, there’s hope for me yet. Perhaps.

Anyway. Meal plan. That.

Maybe I’ll write a blog post on exactly why I meal plan (or in another post, how), but I seem to get lots of questions about it. To save you having to read my dribble later, the long short of it is probably that I just like being organized. I like waking up and knowing what I have the food to make and to know when to start meals. There’s nothing more I dread than the 5pm fridge stare – what am I going to make for dinner? To me, it’s less work to plan out a week than it is to constantly stare down a house full of eyes that want dinner. An hour ago. If anything, maybe this makes me lazier? You can be the judge.

So, back to the matter at hand. This week’s meal plan is brought to you by Costco chicken. Kidding. Sort of.

Monday – D: Crunchy Baked Chimichangas, Mexican Rice, Corn on the Cob

Tuesday – B: Sausage, Egg and Apple Casserole, Spinach Smoothies

L: Quinoa Tabbouleh Lettuce Wraps, Olives, Pickles

D: Egg and Tomato Sandwiches, Cheddar and Chive “Squachos”

Wednesday – B: Blueberry Breakfast Bake

L: Waldorf Chicken Salad Sandwiches, Cinnamon Sweet Potato Fries

D: Aloo Gobi, Basmati Rice, Indian-inspired Kale, Whole Wheat Naan

Thursday – B: Bagel Egg Sandwiches, Fruit Smoothies

L: Tuna w/ Lemon and Dill Pasta Salad

D: Braised Red Cabbage with Beans, Pulled Pork BBQ Sandwiches, Carrots?

Friday – B: Cherry Pecan Bars, Hardboiled Eggs

L: Grilled cheese w/ Tomato Soup

D: Buttermilk Chicken Drumsticks, Brussel Sprouts w/ Pancetta, Salad

Saturday – B: Frittata w/ leftover veggies

L: Turkey Pepper Wraps, Veggies with hummus (??? We may be going to lunch this afternoon)

D: Loaded Black Bean Chili w/ Rice, Homemade skillet cornbread
