It’s been quite awhile since I was able to share our weekly meal plan here. Admittedly, we’ve been pretty busy – in the way that a family of six with twin babies moves, takes a 10-day drive halfway across the country, hosts a housewarming, a neighborhood party and still tries to find time to do normal things can be. Most of our weekly plans were adapted to whatever we had going on the week before or after. Following our neighborhood grill party, we only bought things to round out the meal plan and just used the leftovers that we had, for example.
The return to being able to sit down and plan out a week’s worth of meals (even if it’s a partial week, like below), brings me comfort that perhaps we’re finally settling in here.
Tuesday – D: Roasted Chicken, Garlic Parmesan Potato Wedges, Steamed Broccoli
Wednesday – B: Egg Tortilla Casserole, Tropical Smoothies
L: Swiss Tuna Melts, Carrots and Hummus
D: Cashew Salmon, Sauteed Squash (or perhaps a gratin?), Green Salad
Thursday – B: Sausage Eggwiches, Orange Slices
L: Sesame Chicken Salad, Celery
D: Vegetable Quesadillas, Mexican Rice, Cucumber Salad, Blackened Corn
Friday – B: Egg Breakfast Pizza
L: California Club Wraps, Fruit
D: Parmesan Pork Chops, Roasted Cauliflower, Romaine Salad w/ homemade Italian dressing
Saturday – B: Blueberry Oat Muffins, Fresh Fruit
L: Italian Stuffed Shells, Steamed Broccoli
D: Mini Meatloves, Garlic Mashed Potatoes, BBQ Acorn Squash
Sunday – B: Frittata w/ Leftover vegetables
I’m vegetarian so in order to round out a few of these meals for myself (and to make sure I’m not eating unhealthily), I will also make a batch of Spinach Orzo Pasta Salad and Red Beans and Rice – one of my favorites!
