Weekly Meal Plan – January Week 4

One of my favorite weekend rituals is waking up early to plan our meals for the week ahead. I know a lot of families struggle with eating healthful meals or find themselves at the end of a long day with nothing planned to feed the tired and hungry mouths looking at them in anticipation. While there are a lot of aspects of motherhood I can decidedly confirm are difficult for me, planning and executing weekly meal plans isn’t one of them. My hope is that sharing my meal plans (and recipe links, where appropriate) will inspire you to browse through Pinterest or your cookbook collection to find something to nourish your family with.

Today – B: Eggs Florentine with Fruit Smoothies

L: Ploughman’s Lunch (Sourdough Bread, Rustic Pickles, Olives, Hardboiled Eggs, Sliced Meat)

D: Mini Pot Roast with Veggies, Roasted Cauliflower and Garlic Green Beans

Monday – B: Banana Nut Oatmeal with Hardboiled Eggs

L: Sesame Noodles, Baked Sweet Potatoes, plum slices

D: Chili Pie with Roasted Broccoli, Sautéed Zucchini

Tuesday – B: Spinach and Mushroom Frittata, fruit slices

L: Balsamic Veggie Wraps, Veggies slices and hummus

D: Roasted Chicken Breast with Baked green beans and cucumber salad

Wednesday – B: Cheesy Sausage Muffins, Breakfast smoothies

L: Turkey and Hummus Sandwiches with fresh fruit

D: Gnocchi and spinach bake, asparagus, kale salad

Thursday – B: Fiesta Breakfast Casserole, Breakfast smoothies or fruit

L: Creamy Tomato Soup with Avocado Grilled Cheese sandwiches

D: Broiled Lemon Pepper Fish, Brown Rice, Sautéed Veggies (Jerk Acorn Squash for me!)

Friday – B: Blueberry Baked Oatmeal, Hardboiled eggs

L: Deviled Egg Sandwiches with Four Bean Salad

D: English Muffin Pizzas with Kale Salad

Saturday – B: ‘Leftovers’ Frittata
