Weekly Meal Plan – January Week 2

One of my favorite weekend rituals is waking up early to plan our meals for the week ahead. I know a lot of families struggle with eating healthful meals or find themselves at the end of a long day with nothing planned to feed the tired and hungry mouths looking at them in anticipation. While there are a lot of aspects of motherhood I can decidedly confirm are difficult for me, planning and executing weekly meal plans isn’t one of them. My hope is that sharing my meal plans (and recipe links, where appropriate) will inspire you to browse through Pinterest or your cookbook collection to find something to nourish your family with.

Monday – B: Baked Oatmeal with Pecans over milk, fresh fruit

L: Kale Salad with Leftovers (Vegetarian Chili Pie from Sunday)

D: Cod Bites with Homemade Tartar Sauce, Rustic Mashed Potatoes, Sautéed Green Beans with Tarragon and Lemon

Tuesday – B: Huevos Rancheros with Breakfast Smoothie

L: Cobb Salad

D: Garlic Parmesan Spaghetti, Roasted Brussel Sprouts, Green Salad with Pomegranate Seeds, Feta and Pistachios

Wednesday – B: Dutch Baby w/ Berry Sauce, Hardboiled Eggs

L: Mediterranean Quinoa Salad with Chicken Breast

D: Beef Short Ribs with Mushroom Risotto, Steamed Broccoli, Salad (note: we’ve having guests for dinner)

Thursday – B: Mini Sausage Quiche, fresh fruit

L: Tina Parmesan Sandwiches, Succotash Salad

D: Vegetarian Quesadillas with Mexican Rice and Sautéed Corn (May add in a green – kale?)

Friday – B: Cinnamon Swirl Oatmeal, Fruit Smoothies

L: Chicken Ceasar Wraps, Parmesan Potato Wedges

D: Mushroom Chicken Thighs with Saffron Rice, Peas and Carrots

Saturday – B: Cinnamon Butternut Squash Muffins, Fruit

Next week will likely be an odd week. We are entertaining on Saturday night and my BF is leaving Sunday for a business trip and won’t be back until Tuesday. While he’s away, I’m intending to keep things as simple as possible as I’ll be juggling four kids alone. What are your favorite, go-to meals when you are juggling nutrition and simplicity?
