Weekly Meal Plan – December, Week 1

One of my favorite weekend rituals is waking up early to plan our meals for the week ahead. I know a lot of families struggle with eating healthful meals or find themselves at the end of a long day with nothing planned to feed the tired and hungry mouths looking at them in anticipation. While there are a lot of aspects of motherhood I can decidedly confirm are difficult for me, planning and executing weekly meal plans isn’t one of them. My hope is that sharing my meal plans (and recipe links, where appropriate) will inspire you to browse through Pinterest or your cookbook collection to find something to nourish your family with.

This week, you’ll notice something a bit different about my meal plan – it includes three meals for each day. I’ve been struggling getting the boys fed before W leaves for school in the morning so I’m hoping that having a pre-determined meal plan for breakfast will help get me going in the morning. So far, it’s been working great and we’ve been having amazing lunches, too. Do you plan all your weekly meals, or just dinners?

Sunday – B: Banana Blueberry Bread, Hardboiled Eggs

L: Macaroni Salad

D: Beef Stew with Potatoes and Carrots, Dinner Rolls

Monday – B: Zucchini Tomato Frittata, Spinach Smoothies

L: Swiss Tuna Melts, Veggie Slices

D: Vegetarian Chili, Brown Rice, Cornbread

Tuesday – B: Blueberry Baked Oatmeal, Hardboiled Eggs

L: Creamy Tomato Soup with Grilled Cheese Sandwiches

D: Gnocci and Spinach Bake, Asparagus, Side Salad

Wednesday – B: Egg Tortilla Casserole, Blueberry Smoothies

L: Balsamic Veggie Wraps, Fruit

D: Bacon-Wrapped Apple Chicken, Mashed Sweet Potatoes, Garlic Green Beans

Thursday – B: Cheesy Drop Biscuits, Fresh Fruit

L: Guacamole Veggie Pita Pockets, Carrot Slices

D: Cauliflower Bake, Sauteed Collards, Side Salad

Friday – B: Scrambled Eggs, Spinach Smoothies

L: Fruity Chicken Salad Sandwiches, Veggie Slices

D: Country Ribs w/ Creamy Polenta, Steamed Broccoli, Carrots

Saturday – B: Pumpkin Nut Muffins, Fresh Fruit


D: Cheese Enchiladas, Corn and Black Bean Salad, Tortilla Chips
