Weekly Meal Plan – October 2nd – October 7th

One of my favorite weekend rituals is waking up early to plan our meals for the week ahead. I know a lot of families struggle with eating healthful meals or find themselves at the end of a long day with nothing planned to feed the tired and hungry mouths looking at them in anticipation. While there are a lot of aspects of motherhood I can decidedly confirm are difficult for me, planning and executing weekly meal plans isn’t one of them. My hope is that sharing my meal plans (and recipe links, where appropriate) will inspire you to browse through Pinterest or your cookbook collection to find something to nourish your family with.

Bacon Wrapped Macaroni and Cheese

Above: Bacon-wrapped macaroni and cheese from yesterday’s lunch! It was originally something I intended to make last weekend for lunch but third trimester twin mama bellies get lazy sometimes. 🙂

This week’s plan runs Sunday through Friday night. Any recipes I plan to use are linked for you, if you’re interested in joining along.

Sunday – Homemade Baked Chicken Nuggets, Creamy Coleslaw, Steamed Broccoli. For dessert (it’s my youngest son’s birthday!) – Homemade strawberry cake with cream cheese icing and homemade blueberry ice cream.

Monday – Three Bean Vegetarian Chili with Homemade Cornbread

Tuesday – Farmer’s Market Pasta with White Bean Caprese Salad

Wednesday – Apple and Gouda Stuffed Chicken Breasts with Smoky Roasted Sweet Potatoes, Steamed Broccoli

Thursday – Roasted Red Pepper Minestrone, Italian Salad

Friday – Pan-seared Cod with White Wine Tomato Basil Sauce, Brown Rice, Asparagus
